STEP 01

Mix the rub

Two teaspoons American Harvest oregano, one of chilli flakes, grated garlic, salt, and enough olive oil to loosen.

STEP 02

Coat and rest

Rub it through chicken thighs and leave at least thirty minutes, or overnight in the fridge for more.

STEP 03

Grill hot

Cook over a hot grill until charred at the edges and cooked through. Rest, then scatter more herbs to finish.
