Coconut Chia Breakfast Parfait with American Harvest Chia Seeds
Start your morning with this creamy, layered Coconut Chia Breakfast Parfait — a no-cook recipe packed with omega-3s, fibre, and natural energy. Made with American Harvest premium chia seeds and coconut milk, it takes just 5 minutes to prep the night before.
Ingredients
- 3 tbsp American Harvest Chia Seeds
- 200ml full-fat coconut milk (or your preferred plant milk)
- 1 tbsp honey or maple syrup
- ½ tsp vanilla extract
- Fresh mango, sliced
- Fresh berries (strawberries, blueberries)
- 2 tbsp toasted coconut flakes
- Granola, to layer
Instructions
- Mix the chia pudding: In a jar or bowl, whisk together American Harvest Chia Seeds, coconut milk, honey, and vanilla extract until well combined.
- Refrigerate overnight: Cover and refrigerate for at least 4 hours or overnight. The chia seeds will absorb the liquid and form a thick, creamy pudding.
- Layer your parfait: In a serving glass, layer granola, then the chia pudding, then fresh mango and berries. Repeat for a second layer.
- Top and serve: Finish with toasted coconut flakes, a drizzle of honey, and a few extra berries. Serve chilled.
