Coconut Chia Breakfast Parfait with American Harvest Chia Seeds

Start your morning with this creamy, layered Coconut Chia Breakfast Parfait — a no-cook recipe packed with omega-3s, fibre, and natural energy. Made with American Harvest premium chia seeds and coconut milk, it takes just 5 minutes to prep the night before.

Ingredients

  • 3 tbsp American Harvest Chia Seeds
  • 200ml full-fat coconut milk (or your preferred plant milk)
  • 1 tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • Fresh mango, sliced
  • Fresh berries (strawberries, blueberries)
  • 2 tbsp toasted coconut flakes
  • Granola, to layer

Instructions

  1. Mix the chia pudding: In a jar or bowl, whisk together American Harvest Chia Seeds, coconut milk, honey, and vanilla extract until well combined.
  2. Refrigerate overnight: Cover and refrigerate for at least 4 hours or overnight. The chia seeds will absorb the liquid and form a thick, creamy pudding.
  3. Layer your parfait: In a serving glass, layer granola, then the chia pudding, then fresh mango and berries. Repeat for a second layer.
  4. Top and serve: Finish with toasted coconut flakes, a drizzle of honey, and a few extra berries. Serve chilled.
