Roasted Sweet Potato & Quinoa Buddha Bowl with American Harvest Quinoa

Ingredients

  • 1 cup cooked American Harvest Quinoa
  • 1 medium sweet potato, cubed and roasted
  • ½ avocado, sliced
  • 1 cup mixed greens
  • ½ cup cherry tomatoes, halved
  • 2 tbsp tahini or chili mayo
  • Salt and pepper to taste

Instructions

  1. Roast sweet potato cubes at 200°C (400°F) for 20–25 mins until tender.
  2. Assemble quinoa, greens, roasted sweet potato, avocado, and cherry tomatoes in a bowl.
  3. Drizzle with tahini or chili mayo.
